Abstract Nutmeg is the dried kernel of the seed of Myristica fragrans. Its extract consists of fixed oil, volatile and essential oil with different concentration which has medicinal properties. The present study was designed to apply Ultrasound-assisted hydrodistillation (UAHD) and Microwave- assisted extraction for extraction of essential oil from myristica fragrans, to optimization of various process conditions . Design of experiment (DOE) will be used for optimization and will also compare the Traditional and novel technique and quality of essential oil. The effects of separation parameters such as temperature, pressure, Extraction time and particle size on the extraction rate of nutmeg oil will be observed.
